What is sweet, smokey and crunchy all over? Vosges Mo's Cinnamon & Sugar Bar, of course! As you probably already know, cher chocophiles, I am a HUGE fan of Vosges chocolate. The beauty of Vosges chocolate is in its unique combinations and attention to detail. Mo's Cinnamon & Sugar bar is no exception.
The Mo bar has had quite a run. The original bar is a simple yet inspired combination of bacon, salt and milk chocolate. Well, this was a very exciting find. Even more exciting was the next Mo bar I came across, which has the same sulfate-free, Hickory smoked, uncured bacon and Alderwood salt, but with 62% cacao chocolate as opposed to milk. So you can only imagine my elation when I found the next variation on this Mo Dark bar, this time with the bacon and the 62% cacao PLUS cinnamon sugar. Whoa!
Mo's Cinnamon & Sugar bar is an exploration in texture. The bacon is super finely ground whereas the cinnamon and sugar, (which is really more of a cinnamony sugar as opposed to two separate entities), is chunkier than I would have expected. This allows for an overall hint of smokey flavor as opposed to a strong bacon taste. The chocolate itself is extra smooth (like, Lindt truffle smooth), which allows the coarse texture of the cinnamon sugar to really stand out. This makes the sugar in the bar really apparent, which for me made it seem a bit sweeter than other bars I've had in the 60% cacao range.
I really enjoyed this bar, especially the fact it is stamped with a quirky illustration of a presumably chocolate-obsessed chica like myself. However, I was hoping for a stronger bacon flavor. While eating it I realized that what I actually wanted was just bacon. So I trotted off to the deli. As should you. Unless you really just want chocolate in which case I'd say this one is a winner.
